Lemon Melt Away Cookies
These delicious and light lemon flavored cookies practically melt in your mouth!
- 1½ cups all purpose flour
- ¼ cup cornstarch
- ½ tsp salt
- 14 tbsp butter
- 1½ cups powdered sugar
- 4 tbsp lemon juice
- 2 tbsp lemon zest
Start by zesting 2 tablespoons of lemon zest.
Now juice the lemons until you have 4 tablespoons of lemon juice.
Now for the dry ingredients.
Begin by mixing 1 ½ cups of all purpose flour.
Add ¼ cup of cornstarch.
and ½ teaspoon of salt into a bowl.
Now with a mixer, cream 14 tablespoons of softened butter .
To the butter, add the:
1 ½ cups of powdered sugar
and mix until combined.
Next, add the lemon juice and lemon zest and mix.
Now slowly add the dry ingredients until combined.
Once the dough is formed, refrigerate it for one hour.
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Using a cookie scoop, place the dough on the cookie sheet.
Then using a cup and a small piece of parchment paper, gently flatten the cookie dough balls.
Bake the cookies for 12-14 minutes or until the cookies are slightly golden on the edges.
Allow the cookies to cool fully before glazing.
To make the glaze, mix 1 cup powdered sugar with 3 tablespoons of lemon juice.
You can add more or less powdered sugar and/or lemon juice to achieve your desired consistency.
Now using a spoon drizzle the glaze on each cookie.
