Rice Krispies are a favorite after school snack and are easy to make with just three ingredients.
One of the traditions my kids look forward to each school day is what snack I bring along for them. Last fall I was finding it difficult to drive home as the kids bickered in the backseat or fought for my attention to share about their day. They just seemed downright crabby. Crabby = Hungry. So… I decided it would be a fun way to try new recipes for baked goods and snacks to bring along a little surprise each day. And guess what? It worked. They happily munch on their snack and chat happily about their day on the way home! Yeah!!
Here’s one of their favorite treats: Rice Krispies. The key for me to this recipe is using the whole stick of butter, I know, but it helps keep the treats chewy and not dry.
Ingredients: 1 box Rice Krispies, 1 stick of butter, 1 bag of mini marshmallows
Poor whole box of Rice Krispies in a big bowl and set aside. Spray a 13 X 9 casserole dish with nonstick spray. Melt stick of butter over low heat- when melted add whole bag of marshmallows and stir continuously. Once all marshmallows are melted in with the butter, pour mixture into bowl of Rice Krispies and stir. After all ingredients are combined, pour into casserole dish. I actually spray nonstick spray on my fingers and push the mixture into the pan~ messy, but works really well!
