One of my favorite flavors, especially during Summer, is lemon. Give me slices of lemon loaf, lemon poppy seed muffins, lemon bars and lemon in my water.
I now have a new go to lemon treat I’m loving to make too, Lemon Melt Aways.
These little cookies truly do melt away right in your mouth. They are so dainty, soft and sweet!
Let’s get baking!
Start by zesting 2 tablespoons of lemon zest.
Now juice the lemons until you have 4 tablespoons of lemon juice and set aside.
Now for the dry ingredients. Begin by mixing 1 ½ cups of all purpose flour, ¼ cup of cornstarch and ½ teaspoon of salt into a bowl. Then set aside.
Now with a mixer, cream 14 tablespoons of softened butter. To the butter, add the 1 ½ cups of powdered sugar and mix until combined.
Next add the lemon juice and lemon zest and mix.
Now slowly add the dry ingredients until combined.
Once the dough is formed, refrigerate it for one hour.
Now preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Using a cookie scoop, place the dough on the cookie sheet.
Then using a cup and a small piece of parchment paper, gently flatten the cookie dough balls.
Bake the cookies for 12-14 minutes or until the cookies are slightly golden on the edges.
Allow the cookies to cool fully before glazing.
To make the glaze, mix 1 cup powdered sugar with 3 tablespoons of lemon juice.
You can add more or less powdered sugar and/or lemon juice to achieve your desired consistency.
Now using a spoon drizzle the glaze on each cookie.
Enjoy as these cookies melt away in your mouth!
